AirFryer Seitan

The Dry:
 1 1/2 cups vital wheat gluten
1/4 cup Garbanzo bean flour
1/2 cup nutritional yeast
1 tbsp garlic powder
1 tbsp onion powder
1/2 tsp ground black pepper

The Wet:
1 jar (12oz) roasted red peppers with liquid, blended until smooth
3 tbsp olive oil
2 tbsp soy sauce
1 tbsp balsamic vinegar

In the bowl of KitchenAid mixer, mix all dry ingredients together.  In a separate bowl, mix all wet ingredients together.   Add mixed wet to the mixed dry.  Using the flat paddle or dough hook, knead dough until gluten is fully developed (around 8 minutes).  Remove seitan dough from mixer bowl and knead an additional minute or two by hand.  Form the dough into a large log or roast shape.  Tightly wrap the seitan in foil, twisting both ends of foil wrapping and tucking the twisted ends under the seitan.  Place foil wrapped seitan in the airfryer and cook at 350F for 45-60 minutes.   The seitan should feel firm to the touch when done.
