Vegan Kofta




This is a variation of a recipe taken from the Vegan Recipes to Share Facebook Group.

1 can white beans, drained and mashed
1 cup cooked brown rice
1 small zucchini, grated
1/4 sweet onion, grated
1 cup (or more) panko bread crumbs
2 Tablespoons ground flax
1 teaspoon Greek seasoning (or salt and pepper)

Process beans and rice together in a food processor until just a little chunky. Mix together all ingredients with your hands and then shape into little footballs.  Oil grill grates and cook for 15-20 minutes on medium heat or until the outside is golden and crisp.  Or air fry until crispy.
