Truman's Vegan Bratwurst

The Wet:
200 grams Tofurkey 
400 grams cold water
40 grams avocado oil (or other neutral tasting oil)
1 teaspoon Marmite
1-2 teaspoons Liquid Smoke

The dry:
2-3 teaspoons marjoram
1-2 teaspoons ground nutmeg
1 teaspoon ground white pepper
1-2 teaspoons ground sea salt
1 tablespoon onion powder
1 tablespoon garlic powder
1 heaping teaspoon ground caraway seeds
1 teaspoon agar agar powder
1/2-1 teaspoon lemon zest
1/4-1/2 teaspoon red pepper flakes
1//2 teaspoon dry mustard
1/2 teaspoon ground ginger
280 grams vital wheat gluten 

Blend the wet ingredients until smooth in a food processor or blender.   To the well blended wet mixture, add all the dry ingredients and mix well.  Knead the dough just until the gluten starts to develop.  You want to have a softer dough, not a stiff, stretchy dough.  

Divide the dough into twelve equal pieces.   Roll each piece into a 6-7 inch sausage shape.   Wrap each formed sausage in cling wrap or aluminum foil.  Secure each end of the wrapped sausage by twisting each end securely closed.   

Steam the wrapped sausages for 30-40 minutes.  When done, allow sausages to cook slightly then remove them remove them from wrappers. 

To serve, sauté sliced onions and sausages until golden.   Serve with your favorite vegan gravy, mashed potatoes, and favorite veggies.   

Freeze the extra sausages for later use if desired.
