Truman's Zojirushi Mini Bread Machine Seitan
My second attempt at bread machine seitan was much more successful by using the cake cycle instead of the regular bread cycle!
The Wet:
1 1/4 cups cold water
2 tablespoons soy sauce
2 tablespoons avocado oil, or your favorite veg oil
1 heaping teaspoon molasses

The Dry:
1 1/2 cups vital wheat gluten
2 tablespoons nutritional yeast flakes
1 tablespoon shiitake mushroom powder (optional)
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons dried marjoram
1/2 to 1 teaspoon dried sage
Remove pan from bread machine. First, pour wet ingredients into bottom of bread machine pan. Then, add the dry ingredients on top of the wet ingredients. Return pan to bread machine. Close the bread machine lid and push the CAKE button on the bread machine. (I have used the regular bread function on my machine, but it made the seitan too tough to eat, in my opinion.) If your machine doesn't have a cake button, try to find the bread machine cycle that is the shortest.
Just before bread machine starts the bake cycle, use your fist or a spatula to press the seitan down to fill in the corners of the pan. (This step is not necessary but makes for a more even seitan roast.) Allow the bake cycle to complete. When done, invert the seitan onto a cutting board or plate. Remove the breach machine paddle from the seitan roast. Using a bread knife, slice the roast into thinnish slices and serve with a nice vegan gravy. Leftover seitan slices make wonderful fillings for sandwiches etc.
