Mole Black Bean Tacos with Cashew Margarita Sauce and Tomato Cumin Quinoa
Mole Black Bean Taco with Cashew Margarita Sauce and Tomato Cumin Quinoa...there were enough leftovers to make lunch bentos with sautéed onions, bell pepper, prickly pear, and jalapeño.
1) Simmer black beans in Doña Maria brand Mole sauce (it's vegan according to PETA). Make sure to dilute the jarred mole with 4 parts water to one part jarred mole.
2) Sauté sliced sweet onions, sliced bell peppers, thinly sliced jalapeños, and strips of prickly pear. Season with your favorite vegan taco seasoning.

4) In a rice cooker, add one rice cooker cup of quinoa. Fill with water to the 1 cup mark. Add one minced garlic clove, ~1/2 teaspoon of whole cumin, and a handful of grape tomatoes. Season with salt and pepper to taste. Press start and cook until done
