Truman's Thermomix® Seitan

This recipe is designed for the TM5 model.

The Dry:
1 cup vital wheat gluten
1 tsp onion powder
1 tsp garlic powder
1 tsp marjoram
1/2 tsp sage
3 tbsp nutritional yeast 


The Wet:
1/2 tsp vegetable stock paste dissolved in 1/2 cup cold water, (plus 1/2 cup water?) 
2 tbsp soy sauce
2 tbsp oil
1 tsp molasses

Simmering broth:
1500g water
1/4 cup soy sauce
1 tbsp vegetable stock paste
1 tsp molasses

1-2 tbsp oil

Add dry ingredients to a dry TM bowl.  Mill for 5-10 seconds at speed 10.  After the dust clears, scrape down bowl.  Add the wet ingredients.  Using the knead feature/button, knead for 10 minutes (or until desired elasticity is reached). Turn out dough onto a plate. Knead into a one ball.   Allow dough to rest while you make the broth.

To make the broth, add simmering broth ingredients to bowl.  Set TM for 10 minutes at Varoma on speed 2.  Bring to a boil.   

Cut the ball of dough into small pieces. Coat all the pieces with 1-2 tbsp oil.  Add the pieces to the simmering basket.   Add simmering basket to TM bowl containing the broth.    Coating the pieces will help them from sticking together. Add measuring cup or aroma basket on top of bowl to minimize any splattering that might occur.  Simmer for 45 minutes at 98º Celsius on speed 2.  Intermittently, stir the seitan gently with the TM spatula inserted into the TM lid. This will ensure even cooking.  When done, carefully remove the simmer basket from the broth with the TM spatula.   Place basket on a plate and allow to cool for minutes.
