Thai Spicy Peanut Sauce
This is an attempt to recreate the spicy peanut sauce served at my favorite Denver Thai restaurant. Serve it with noodles, stir-fry, tofu, or spring rolls. Use it as a dip. Or, just eat it with a spoon. This stuff is addictive. You have been warned!
one 14-oz can organic coconut milk
1 cup organic peanut butter
4 tablespoons vegan sugar
2 tablespoons organic soy sauce
4 cloves garlic, minced
1 teaspoon chili paste
1/2 to 1 tablespoon rice vinegar (optional)
1 tablespoon cornstarch dissolved in 6 tablespoons water
Combine all ingredients in a saucepan. Heat on medium high heat until bubbly. Serve warm.
