Raw Carrot Curry Soup

1 cup carrots, coarsely diced
1 stick celery
1/2 apple, cored, and diced
1/2 to 1 cup water
1/4 cup dried coconut
1 heaping teaspoon red miso paste
1 teaspoon agave nectar
1 heaping teaspoon curry powder
1 clove garlic
small piece of ginger
1 teaspoon cold-pressed virgin coconut oil

In a high-speed blender (e.g. Blendtec or Vitamix), combine all ingredients and blend until smooth.  Continue blending soup until warmed by blender.
