The Power of Peanut Butter Balls


These little nuggets of sweet, golden deliciousness are great energy boosters for your workouts.  But don't let the word "workout" steer you away from trying them.

They make great snacks when you are wanting to graze on everything in sight, including the kitchen granite countertop.  The protein and fat combat those gnawing hunger pangs, and the agave nectar offers up a low-glycemic index treat for that sweet tooth.   Give 'em a go.  They are like a warm, comforting hug---reminiscent of your grandmother's Christmas candy!  Seriously.

2 tbsp. creamy organic peanut butter
2 tbsp. amber agave nectar
2 tbsp. non-GMO soy protein isolate powder
2 tbsp. Better than Soy vegan beverage mix (powder)
organic fine shredded coconut (no added sugar)

Combine ingredients into a thick dough.  Add additional agave nectar if dough is too dry.  Roll dough into 12 small balls.  Coat balls with shredded coconut.   Chill.   Serve.

Makes 12 small balls.
