Almost Raw, Warm, and Creamy Tomato Basil Soup

one Vitamix blender (or other high speed blender)
one 14.5 oz can organic diced tomatoes (or ~2 cups fresh grape tomatoes to make soup raw vegan)
1/8 cup filtered water
1/2 teaspoon celtic sea salt
1/4 teaspoon coarse ground black pepper
1 clove garlic
1/2 teaspoon dried basil
2 tablespoons chopped sweet onion
2 tablespoons virgin olive oil
1 tablespoon organic pine nuts
Dried basil, pine nuts, olive oil, and chopped sweet onion for garnish

Blend all ingredients until warmed (118°F). Garnish with drizzle of olive oil and sprinkles of pine nuts, dried basil, and chopped onion.

Serves one generous portion.
