Vegan Pupusas


Pupusas are flatbreads made from masa by the Pipil tribe in El Salvador.  Their origins date back to the Mayan and Incan civilizations of MesoAmerica.  They remind me of flat tamales or stuffed tortillas.

Check out Susan's recipe for vegan pupusas.   I added some chopped parsley and salt/ pepper to the masa dough and used vegan cheese instead of the black bean filling.....they were great.   I served them with the vegan Feijoada recipe just posted today.   It is definitely worth trying!
