Gateau de Sirop
This Cajun cake is similar to gingerbread....but only better!!!
1 teaspoon aluminum-free baking powder
1/2 teaspoon baking soda
1/4 teaspoon cream of tartar
1/2 teaspoon salt
1 teaspoon ground ginger
1 1/2 teaspoons ground cinnamon
1/4 teaspoon freshly ground nutmeg
1/2 teaspoon cloves
2 tablespoons ground golden flaxseed ( or other vegan egg substitute for 2 eggs)
3/4 cup soy milk
1/2 cup vegetable oil ( I use olive oil or grapeseed oil for added nutrition)
1 1/2 cups Steens 100% pure cane syrup
1 1/2 cups Steens 100% pure cane syrup
Preheat oven to 350°F. Combine dry all dry ingredients, except ground flaxseed, in large mixing bowl. In separate mixing bowl, combine syrup, soy milk, oil, and ground flaxseed. Now, add wet ingredients to dry ingredients. Mix just until combined without any lumps.
Pour into a greased and floured nine-inch round pan. Bake for ~40-45 minutes.
Serve warm with extra Steen's syrup!
