Creamy Vegan Alfredo Sauce

This is adapted from the PBS television series, Delicious TV.

3/4 cup walnuts
1/4 to 1/2 cup pine nuts
2-3 cloves garlic
salt to taste
white pepper to taste
2-3 gratings fresh nutmeg
fresh, chopped parsley
2 tablespoons olive oil
1/2 cup hot soy milk, more or less may be needed
Cooked pasta for serving

In food processor or blender ( I used my Vitamix Blender), combine nuts, garlic, and olive oil. Process into a fine paste. With processor or blending running, add enough hot soy milk to form a thick, rich sauce. Add seasonings to taste.

Toss cooked pasta with enough alfredo sauce to coat. Consider adding pieces of vegan bacon and steamed, shelled edamame (soy beans) to pasta for a quick, healthy meal. Serve immediately, sprinkled with vegan parmesan cheese.

This sauce makes a great creamy dip for veggies as well.
