Moroccan Tagine

The spices and raisins provide a less than subtle sweetness that is great if you are wrestling with a sweet tooth. 

1 large onion, chopped
3 cloves garlic, minced
3/4 cup carrots, chopped
1 bell pepper, cubed
1 zucchini, sliced
1 yellow squash, sliced
1 package Quorn chik'n tenders, or other vegan protein source
2 cans chick peas, rinsed and drained
1/2 cup raisins
1/2 to 1 cup water
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
1/4 teaspoon ground allspice
1/4 teaspoon cinnamon
1/4 teaspoon harissa (or cayenne pepper)
salt and pepper to taste
Olive oil

Saute onions with small amount of olive oil until translucent.  Add garlic, carrots, bell pepper, zucchini, squash. Saute for 1-2 minutes.   Add remaining ingredients.  Simmer over medium heat for 30 minutes, or until veggies are tender.  Stir occasionally.

Serve with couscous.

Serves 4 hungry people.
