Vegan French Toast (Pain Perdu)

1/4 cup ground golden flaxseed
3/4 cup boiling water
1 cup soy milk
2 tablespoons sugar
2 tablespoons grapeseed or olive oil
1/2 cup whole wheat pastry flour
fresh gratings of nutmeg to taste
cinnamon to taste
8-10 thick slices of multigrain bread

Whisk together boiling water and flaxseed.  Allow to cool.  This is the equivalent to two eggs.

Whisk together flaxseed mixture, soy milk, sugar, oil, flour, nutmeg, and cinnamon.  Add additional soy milk if a thinner batter is desired.

Place slices of bread into bread and allow them to absorb  the batter for approximately 1-2 minutes.  Remove excess batter from slices.   Cook on an oiled griddle or in a frying pan with a little oil on medium to medium-high heat until golden, toasty brown.

Serve garnished with sprinkles of additional cinnamon/nutmeg and warm maple syrup. Consider serving with fresh strawberries; or adding vegan sausage patties or bacon for added protein.
