A very quick vegan chocolate pudding
OK, so I was very, very skeptical of this, but it really is a tasty, healthy alternative to a traditional custardy pudding. It has the consistency of the Finnish yogurt viili (a ropy, gelatinous goo). If you can get beyond this texture, you're good to go.
Flaxseed is a nutritionally complex food with high concentrations of alpha linoleic acid (an omega 3 fatty acid), fiber, lignans, and other vitamins/minerals. Flaxseed has potential to help alleviate constipation, reduce cholesterol, fight cancer, and control blood glucose levels.
1 cup of soy milk (rice milk)
1/2-1 tablespoon cocoa powder (or carob powder) to taste
1/4 banana (alternatively, replace banana with a sweetener of choice like agave nectar)
2 tbsp. ground golden flaxseed
Mash the banana in a bowl. Add soy milk and ground flaxseed to mashed banana until you get a pudding texture. For a smoother effect, combine the contents in a blender.
