Vegan Pancakes and Bacon

1 cup all-purpose flour
1 cup whole wheat flour
2 tablespoons ground golden flax seed
2 tablespoons sugar or 1 tablespoon agave nectar
2 tablespoons aluminum-free baking powder
1 cup soy yogurt (or 1 cup soy milk with 1 tablespoon vinegar)
1 to 1 1/2 cups soy milk

Combine all dry ingredients.  Use a whisk to mix thoroughly and to remove any lumps.

Add 1 cup soy yogurt and 1 cup soy milk to dry ingredients.   Add additional soy milk if needed to make a thick pancake batter.  Mix just until combined. Do not over-mix.

To make each pancake, pour 1/4 cup to 1/3 cup of batter onto a griddle or skillet on medium to medium high heat.  When the top starts to dry and bubbles form, flip pancake over and cook until firm and golden brown.

Serve with a non-hydrogenated margarine like Smart Balance Organic Buttery Spread or Earth Balance vegan buttery spread, hot maple syrup, and a soy bacon like Lightlife Fakin' bacon.
