Sticky Chewy Chocolate Cookies




This is adapted from eat'n veg'n.

1 tablespoon ground chia seeds
3 tablespoons water
3/4 cup all-purpose flour
1 heaping tablespoon cocoa powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2/3 cup agave nectar
1 tablespoon vanilla extract
1 ounce unsweetened vegan chocolate, melted

Preheat oven to 350°F.  Line baking sheet with parchment paper.

Whisk together ground chia seeds and water.  Set aside.  Whisk together the flour, cocoa powder, baking soda, and salt.  Set aside.

To the chia mixture, add vanilla and agave nectar.  Mix well.  Add in flour mixture and mix just until incorporated, then add in melted chocolate. Stir well.

Using a 1/2 inch to 1 inch scoop,  form balls and place onto parchment paper about two inches apart.

Bake at 350°F for 14-15 mintues, or until cookies flatten slightly and the tops begin to crack.  Let cool on pan a few minutes before placing on rack to cool completely.

Makes 12-18 cookies
