Pineapple Halwa
1/2 cup suji (also called cream of wheat, farina, rava, semolina)
2 tablespoons t0 1/4 cup Earth Balance vegan buttery stick, depending on preference
1/3 cup organic sugar
1/2 cup canned pineapple chunks, drain the juice and reserve
reserved pineapple juice and water to make 1 1/2 cups liquid
Pinch of cardamon powder
sliced almonds or cashews to garnish
Bring juice/water, sugar, and cardamon to a boil in a sauce pan. Set aside.
Melt the buttery stick in a skillet on medium heat. Add the suji and toast until golden brown in color.
Add the boiled liquid slowly to the toasted suji. Add the pineapple chunks to the mixture.
Reduce the heat to medium low and allow the mixture to cook for approximately 3 minutes.
Suji will absorb the liquid as the halwa cools.
Garnish with almonds or cashews.
