Vegan Irish Soda Bread



2 cups of flour (may be a mixture of organic rye flour, organic whole wheat pastry flour, and organic unbleached all purpose flour)
1 tablespoon organic cane sugar crystals
1 teaspoon baking soda
pinch of celtic sea salt
1 cup plain soy yogurt (or 1 cup soy milk with 2 teaspoons vinegar or lemon juice or cream of tartar)

Preheat oven to 425° F.

Whisk together flour, sugar, flaxseed, baking soda, and salt in a medium sized bowl.  Add soy yogurt or equivalent to the dry ingredients.  Mix well.  You may need to add more soy yogurt or soy milk if dough is too dry.  Ideally, you would like a sticky dough. Form dough into a ball and place on an oiled cookie sheet (or in an oiled cast iron skillet).  With a sharp knife, cut a cross in the top of the dough.  Bake @ 425°F for  25 minutes, then reduce heat to 350°F and bake for 15 minutes.
