Dabbling with Seitan


After discovering I have elevated cholesterol and triglyceride levels, I find myself searching for a healthier diet and lifestyle.  On this voyage of self-discovery, I stumbled upon the vegetarian protein source, seitan.  Everyday Dish TV has a great recipe for Spicy Italian Vegetarian Sausage.  I made this today---it was super easy.   Beans, Figs, and Katz has another take on seitan.  I highly recommend them all if you are looking for healthy, veg protein and do not have an allergy or sensitivity to wheat gluten.
