Corn Crackers

Simple. good. These snacks are great when you are wanting to gnash healthily.

3 cups stone ground cornmeal

1/4 cup sesame seeds

sea salt and freshly ground black pepper to taste

1/2 cup light olive oil or corn oil (extra virgin olive oil is too overpowering)

1 1/2 cups boiling water

Preheat oven to 350F.  Combine cornmeal, sesame seeds, salt and pepper in a large bowl.  Stir in oil and boiling water, if needed add just enough additional water to form a stiff batter.  Allow batter to cool.  With your hands oiled, form small flat cakes, and place on an oiled cookie sheet.  Press each cake flatter with the oiled bottom of a drinking glass.  Bake for about 40 minutes until lightly toasted.
