Chickenless Salad Lettuce Wraps




If you cannot find soy curls, chopped silken tofu can be substituted.

1 cup Soy Curls, can be found @ www.butlerfoods.com
1 cup hot water, seasoned with a 1 tablespoon of vegetarian, low sodium bouillon
1 granny smith apple, chopped
2 stalks of celery, chopped
1/4 cup of walnuts or pecans, chopped
2 to 4 tablespoons mayonnaise
1/4 teaspoon poultry seasoning
1/2 to 1 teaspoon indian curry powder, depending on your preference 
1 tsp fresh lemon juice
romaine lettuce leaves, washed & dried

Soak the soy curls in the seasoned hot water for 10 minutes.  Meanwhile, chop the apple, celery, and walnuts and place in a mixing bowl.  Then, add the mayonnaise, poultry seasoning, curry powder, and lemon juice to the bowl.  After 10 minutes have elapsed, drain the soy curls.  Squeeze out excess liquid from the soy curls by placing in a collander and pressing them with a potato masher.   Add the soy curls to the bowl and mix all the ingredients together.  Serve with romaine lettuce as a wrapper.

Serves two.
